The edge is bevelled to a 15-degree angle and hand-finished using waterstones. Tamahagane knives are perfectly sharp straight out of the box.

Derived from the same techniques used to produce and forge samurai swords, Tamahagane has always been synonymous with strong and sharp.


Our Story

"Tamahagane" is at the root of the Japanese Samurai Sword. The name was only used for very high quality, very pure steel for swords. For more than 600 years Japan had the experience of producing the sword called the "Katana". Tamahagane knives are made from the knowledge accumulated from these days. Today all knives are made by Kataoka in his factory in Niigata to the most exacting standards. Tamahagane knives are beautiful to own and use.



Tamahagane San Tsubame

Tamhagane San Tsubame feature a hammered effect on the blades caused by the Tschume process, it is finished with a black micarta handle. It is made with a 3-ply stainless steel construction. The middle layer is VG-5 which forms the edge of the blade. The two outer layers are made of SUS-410 stainless steel, which is softer and more stain resistant in order to protect the cutting edge.


Tamahagane San

Tamahagane San features a brown micarta handle with weighted balance. Tamahagane’s core range. It is made with a 3-ply stainless steel construction. The middle layer is VG-5 which forms the edge of the blade. The two outer layers are made of SUS-410 stainless steel, which is softer and more stain resistant in order to protect the cutting edge. 


Tamahagane Bamboo

Tamahagane Bamboo features an all stainless-steel hollow handle with a seamless weld. It is made with a 3-ply stainless steel construction. The middle layer is VG-5 which forms the edge of the blade. The two outer layers are made of SUS-410 stainless steel, which is softer and more stain resistant in order to protect the cutting edge. 


Tamahagane San Sakura

Tamahagane San Sakura knives made from a single layer of AUS6 Stainless steel with a hardness rating of around 58HRC. With a handle of black Micarta and blades finished by hand inside the Kataoka factory, these knives offer exceptional value for money.
