The Japanese version of the Chef’s knife, The Santoku Knife. Translating to “three ways” the Santoku is an all-rounded knife that performs, as its name denotes, 3 cutting functions - slicing, dicing and mincing. Easily slicing through vegetables, fruit and meat, the Santoku Knife was initially designed and invented for Japanese homemakers who wanted to recreate Western-style cuisine in their kitchen.

    We aim to pick, pack and dispatch orders on the same day for orders received before 12pm otherwise they are dispatched the following day. However during busy times this may be extended. Orders are only dispatched on working days, Monday to Friday. No deliveries or orders will be dispatched on Bank Holidays or between Christmas and New Year.     Any items purchased may be returned to us for a full refund within 28 days of the original purchase. Items returned to us must be safely packed and sent in the original packaging, undamaged, unused and fit for resale. Refunds will only be made when the items have been safely received back and have been inspected. If these conditions are not met, your purchase will not be refunded.

    The knives are finished with glorious laminated wooden handles, which contain weights to ensure that the knives are perfectly balanced.

    3 Ply VG-5 Blade

    Our Tamahagane San Knives are all made with a 3 ply stainless steel construction. The middle layer is VG-5 which forms the edge of the blade. 


    This layer is exceptionally hard (61 HRC), it is as hard as VG-10 stainless steel but has superior edge retention. The two outer layers are made of SUS-410 stainless steel, which is softer and more stain resistant in order to protect the cutting edge.

    The word Tamahagane means precious steel. Historically, the word Tamahagane has been known as a particular, very pure and high quality steel produced using traditional Japanese techniques.

    Made in Japan

    The Kataoka factory in Niigata Japan uses Tamahagane as its brand name, making exceptional knives that are unsurpassed in sharpness and edge retention.
